This next month and a half are insane for our family. So we are going to be keeping it pretty simple around here–but still yummy! My husband is smoking chickens this weekend, so when I talk about leftover smoked chicken, that’s what I am referring to. And, if you’ve never had smoked chicken–you are missing out!! Our dear friends got us HOOKED on it. Oh, so yummy….
Monday March 21 – Greek Salad with leftover smoked chicken
Tuesday March 22 – Ground turkey tacos/taco salads – This one is a no brainer 🙂
Wednesday March 23 – REAL chicken nuggets, macaroni and cheese and a veggie
Thursday March 24 – Baked chicken, broccoli salad and orange maple glazed sweet potatoes (My girlfriend told me about this chicken recipe, so we are trying it this week! So, if you try it too we are in the same boat! Hoping it is delish!)
Friday March 25 – Leftover night/Pizza di Spaghetti

I’m pulling double duty on my meals next week. I’ve got a sick two year old, so this Momma is going for simple and yummy. When I make my roasted chicken and veggie dinner on Monday night, I will roast 3-4 extra and use this to make my chicken salad for Wednesday night’s dinner. And the Texas Caviar Rice and Beans dinner is delish and a no “cooking” recipe that is a fan favorite at our house. My week goes so much better when I have my dinner plan organized and ready. My goal is to have this up by Thursday, so we have time to prepare our list and shop over the weekend. Blessings friends! Since I have to do the agonizing task of meal planning for the week, I thought I’d share what we are doing in hopes it might help you get past the dinner wall that I am always up against. We are out of the house two nights out of the week right now, so I account for one easy meal, one that I can make early in the day and I always leave Friday open for leftover night–or better yet, going out to eat night!
